Wine of Origin: Swartland

Paper Kite is produced from an old vine Semillon block planted in 1965 in the Swartland. Our wine making for this is extremely simple and rigorous. We whole bunch press in an old horizontal basket press, settle overnight to remove the heaviest solids from the juice. Fermentation is spontaneous and occurs in old French oak barrels where the wines will also undergo malolactic fermentation, and spend the rest of their 9 month maturation on their fermentation lees. No additions are made barring some sulphur dioxide after MLF, and then again before bottling. All our winemaking interventions are as minimal as possible and are done with the utmost respect for the vineyards that we are working with.
